Instructions
Cold brew tea
- 1Combine 0oz roasted oolong leaves with 20 2/7 fl oz cold water in a clean jar or pitcher; stir gently to saturate the leaves.
- 2Cover and refrigerate for 8 hours (about 480 minutes) for a smooth, aromatic cold brew; this long steep reduces bitterness.
- 3After steeping, strain the tea through a fine mesh sieve or paper filter into a clean container and keep chilled until assembly.
Cook tapioca pearls
- 1Bring a large pot of water to a rolling boil (use at least 1 liter); add the dried tapioca pearls and stir once to prevent sticking.
- 2Boil according to package instructions, typically 20–30 minutes, then lower heat and simmer until pearls are translucent with a chewy center.
