Instructions

Cold brew tea

  1. 1Combine 0oz roasted oolong leaves with 20 2/7 fl oz cold water in a clean jar or pitcher; stir gently to saturate the leaves.
  2. 2Cover and refrigerate for 8 hours (about 480 minutes) for a smooth, aromatic cold brew; this long steep reduces bitterness.
  3. 3After steeping, strain the tea through a fine mesh sieve or paper filter into a clean container and keep chilled until assembly.

Cook tapioca pearls

  1. 1Bring a large pot of water to a rolling boil (use at least 1 liter); add the dried tapioca pearls and stir once to prevent sticking.
  2. 2Boil according to package instructions, typically 20–30 minutes, then lower heat and simmer until pearls are translucent with a chewy center.
  3. 3Drain the cooked pearls, rinse briefly with warm water, then toss with about 2–3 tbsp (30–1 1/2 fl oz) of simple syrup to coat and keep them glossy and sweet.

Assemble drinks

  1. 1Divide the syrup-coated tapioca pearls between two tall glasses (about 2–3 tbsp pearls per glass).
  2. 2Add ice if desired, pour in 5 1/8 fl oz chilled milk or oat milk per glass, then top with 5 1/8 fl oz chilled cold-brew roasted oolong tea.
  3. 3Stir gently to combine; taste and add additional simple syrup by the tablespoon if you prefer sweeter bubble tea, then serve with a wide straw.
