Ingredients

Panna Cotta Base

  • 13 1/2 fl oz coconut milk(full fat)
  • 6 3/4 fl oz heavy cream
  • 3oz sugar(granulated)
  • 0oz gelatin(powdered)
  • 1 2/3 fl oz water(for blooming gelatin)
  • 1 tsp lime zest(finely grated)

Mango Layer

  • 7oz mango puree(from fresh or frozen mango)
  • 1oz sugar(optional, adjust to taste)

Instructions

Prepare Panna Cotta

  1. Bloom the gelatin by sprinkling it over the 1 2/3 fl oz of cold water in a small bowl. Let it sit for 5-10 minutes until it thickens.
  2. In a saucepan, combine coconut milk, heavy cream, and 3oz sugar. Heat gently over medium heat, stirring until the sugar is dissolved. Do not boil.
  3. Remove the saucepan from heat. Squeeze out excess water from the bloomed gelatin and whisk it into the warm cream mixture until fully dissolved.
  4. Stir in the lime zest. Pour the mixture into 6 individual ramekins or glasses.
  5. Chill in the refrigerator for at least 4 hours, or until set.

Prepare Mango Layer

  1. If using fresh mango, peel and puree the flesh. If using frozen, thaw and then puree.
  2. Stir in 1oz sugar if desired, tasting and adjusting sweetness as needed.

Assemble and Serve

  1. Once the panna cotta is set, gently spoon a layer of mango puree over the top of each serving.
  2. Serve immediately or return to the refrigerator for a short chill before serving.
