Instructions

Fritter Batter

  1. 1In a medium bowl, whisk together the eggs, plain flour, and milk (or water) until just combined. A few small lumps are fine.
  2. 2Gently fold in the whitebait, salt, and freshly ground black pepper. Be careful not to overmix or break the delicate fish.

Cooking the Fritters

  1. 1Heat about half of the butter in a non-stick frying pan over medium heat. Ensure the pan is well-lubricated.
  2. 2Pour about half of the whitebait mixture into the hot pan, spreading it into a round shape approximately 10-12 cm in diameter.
  3. 3Cook for 3-4 minutes per side, or until golden brown and the eggs are set. The fritter should be cooked through but still moist inside.
  4. 4Remove the first fritter from the pan and keep warm. Add the remaining butter to the pan.
  5. 5Repeat with the remaining whitebait mixture to cook the second fritter, following the same steps as above.

Tips

  • Ensure your whitebait is fresh and well-rinsed before incorporating it into the batter for the best flavour.
  • Avoid overcrowding the pan; cook fritters one or two at a time to ensure even cooking and a golden, crispy exterior.
  • Serve your classic whitebait fritters immediately with wedges of fresh lemon for a delightful citrusy contrast.
