Ingredients
Coffee Soak
- 1 1/2 cup espresso or strong coffee(cooled)
- 2 tbsp granulated sugar
- 2 tbsp coffee liqueur or rum(optional)
Mascarpone Cream
- 16oz mascarpone cheese(softened)
- 3 pcs eggs(yolks only, at room temperature)
- 1/2 cup granulated sugar
- 1 cup heavy cream(cold)
Assembly
- 24 pcs ladyfingers
- 2 tbsp unsweetened cocoa powder(for dusting)
Instructions
Prepare Coffee Soak
- In a shallow dish, whisk together the cooled espresso, sugar, and liqueur (if using) until the sugar is dissolved.
Make Mascarpone Cream
- In a medium bowl, whisk together the softened mascarpone cheese and egg yolks until smooth.
- In a separate bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until well combined and no streaks remain. Be careful not to overmix.
Assemble Tiramisu
- Quickly dip each ladyfinger into the coffee mixture, ensuring it's coated but not soggy. Arrange the dipped ladyfingers in a single layer in the bottom of an 8x8 inch baking dish.
- Spread half of the mascarpone cream evenly over the ladyfingers.
- Repeat the process with another layer of dipped ladyfingers and the remaining mascarpone cream.
- Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the tiramisu to set.
- Before serving, dust the top generously with unsweetened cocoa powder.
