Instructions

Prepare Coffee Soak

  1. 1In a shallow dish, whisk together the cooled espresso, sugar, and liqueur (if using) until the sugar is dissolved.

Make Mascarpone Cream

  1. 1In a medium bowl, whisk together the softened mascarpone cheese and egg yolks until smooth.
  2. 2In a separate bowl, whip the cold heavy cream until stiff peaks form.
  3. 3Gently fold the whipped cream into the mascarpone mixture until well combined and no streaks remain. Be careful not to overmix.

Assemble Tiramisu

  1. 1Quickly dip each ladyfinger into the coffee mixture, ensuring it's coated but not soggy. Arrange the dipped ladyfingers in a single layer in the bottom of an 8x8 inch baking dish.
  2. 2Spread half of the mascarpone cream evenly over the ladyfingers.
  3. 3Repeat the process with another layer of dipped ladyfingers and the remaining mascarpone cream.
  4. 4Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the tiramisu to set.
  5. 5Before serving, dust the top generously with unsweetened cocoa powder.

Tips

  • Ensure your mascarpone and eggs are at room temperature for a smoother cream.
  • For best results, let the tiramisu chill overnight for flavors to fully develop.
  • Don't oversoak the ladyfingers; a quick dip is all that's needed.
