Classic Pork Souvlaki with Lemon-Oregano

Souvlaki

Prep: 15 min • Cook: 10 min. Juicy pork shoulder cubes are marinated in bright lemon juice, fragrant oregano, garlic and olive oil, then quickly grilled on skewers and tucked into warm pita with sliced tomato, red onion and creamy tzatziki for a classic Greek street-food experience.

Ingredients

  • 28oz pork shoulder(trim excess fat and cut into 2–3 cm cubes)
  • 1 tsp salt(kosher or sea salt, to taste)
  • 1 tsp black pepper(freshly ground)
  • 8 pcs wooden skewers(soak in water 30 minutes to prevent burning)

Marinade

  • 2 fl oz lemon juice(about 2 lemons, freshly squeezed)
  • 3 tbsp olive oil(extra-virgin)
  • 2 tsp oregano(dried oregano recommended for classic flavor)
  • 3 pcs garlic(cloves, minced)

To serve

  • 4 pcs pita bread(warm or toasted)
  • 1 cup tzatziki(store-bought or homemade, chilled)
  • 2 pcs tomato(ripe, sliced)
  • 1 pc red onion(thinly sliced)
  • 2 tbsp parsley(chopped, for garnish)

Instructions

Marinade & Prep

  1. Combine lemon juice, olive oil, dried oregano, minced garlic, salt and pepper in a bowl to make the marinade.
  2. Place pork cubes in a shallow dish or zip-top bag, pour marinade over, toss to coat and refrigerate for at least 15 minutes or up to 2 hours.
  3. If using wooden skewers, soak them in water for 30 minutes. Meanwhile, cut tomatoes and onion and warm the pita.

Grill

  1. Thread marinated pork pieces onto skewers, leaving a little space between each piece for even cooking.
  2. Preheat a grill or grill pan over medium-high heat and oil the grates lightly to prevent sticking.
  3. Grill skewers 3–4 minutes per side until nicely charred and internal temperature reaches 70°C (160°F). Remove and rest 3 minutes.

Assemble & Serve

  1. Warm pita breads on the grill for 30–60 seconds per side, then open and spread a spoonful of tzatziki inside each pita.
  2. Slice pork from skewers and distribute into pitas with tomato slices, red onion and chopped parsley.
  3. Serve immediately with extra lemon wedges and tzatziki on the side.
