Instructions

Marinade & Prep

  1. 1Combine lemon juice, olive oil, dried oregano, minced garlic, salt and pepper in a bowl to make the marinade.
  2. 2Place pork cubes in a shallow dish or zip-top bag, pour marinade over, toss to coat and refrigerate for at least 15 minutes or up to 2 hours.
  3. 3If using wooden skewers, soak them in water for 30 minutes. Meanwhile, cut tomatoes and onion and warm the pita.

Grill

  1. 1Thread marinated pork pieces onto skewers, leaving a little space between each piece for even cooking.
  2. 2Preheat a grill or grill pan over medium-high heat and oil the grates lightly to prevent sticking.
  3. 3Grill skewers 3–4 minutes per side until nicely charred and internal temperature reaches 70°C (160°F). Remove and rest 3 minutes.

Assemble & Serve

  1. 1Warm pita breads on the grill for 30–60 seconds per side, then open and spread a spoonful of tzatziki inside each pita.
  2. 2Slice pork from skewers and distribute into pitas with tomato slices, red onion and chopped parsley.
  3. 3Serve immediately with extra lemon wedges and tzatziki on the side.

Tips

  • Marinate for at least 15 minutes; up to 2 hours for deeper flavor without making pork mushy.
  • Cook over medium-high heat and turn often to get even char without drying the pork.
  • Serve warm with extra tzatziki and lemon wedges; a crisp salad balances the rich meat.
