Ingredients

  • 2lb pork shoulder(cut into 1-inch cubes)
  • 1 pc lemon(juiced)
  • 2 tbsp dried oregano
  • 4 pcs garlic(minced)
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Serving

  • 4 pcs pita bread(warmed)
  • tzatziki sauce(for serving)

Instructions

Marinating the Pork

  1. In a large bowl, combine the pork cubes, lemon juice, dried oregano, minced garlic, olive oil, salt, and black pepper.
  2. Toss everything together until the pork is evenly coated.
  3. Cover the bowl and refrigerate for at least 30 minutes, or preferably for 1-2 hours, to allow the flavors to meld.

Grilling the Souvlaki

  1. Preheat your grill to medium-high heat.
  2. Thread the marinated pork cubes onto skewers. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
  3. Grill the skewers for about 8-10 minutes, turning occasionally, until the pork is cooked through and nicely charred on all sides.

Serving

  1. Once cooked, remove the souvlaki from the grill.
  2. Serve the classic pork souvlaki skewers immediately with warm pita bread and tzatziki sauce.
