Instructions

Marinating the Pork

  1. 1In a large bowl, combine the pork cubes, lemon juice, dried oregano, minced garlic, olive oil, salt, and black pepper.
  2. 2Toss everything together until the pork is evenly coated.
  3. 3Cover the bowl and refrigerate for at least 30 minutes, or preferably for 1-2 hours, to allow the flavors to meld.

Grilling the Souvlaki

  1. 1Preheat your grill to medium-high heat.
  2. 2Thread the marinated pork cubes onto skewers. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
  3. 3Grill the skewers for about 8-10 minutes, turning occasionally, until the pork is cooked through and nicely charred on all sides.

Serving

  1. 1Once cooked, remove the souvlaki from the grill.
  2. 2Serve the classic pork souvlaki skewers immediately with warm pita bread and tzatziki sauce.

Tips

  • For extra tender pork, ensure you use good quality pork shoulder that has a nice marbling of fat.
  • Don't overcrowd the grill; cook the souvlaki in batches if necessary to ensure even cooking and charring.
  • Serve with a side of Greek salad or grilled vegetables for a complete and satisfying meal.
