Ingredients

  • 4 tbsp butter(unsalted)
  • 4 tbsp all-purpose flour
  • 2 cup whole milk(warmed)
  • 1/4 tsp nutmeg(freshly grated)
  • 1/2 tsp salt(or to taste)
  • tsp white pepper(pinch, optional; null)

Instructions

Making the Béchamel

  1. In a medium saucepan, melt the butter over medium heat until foamy.
  2. Add the all-purpose flour to the melted butter and whisk continuously for 1-2 minutes, creating a smooth roux. Do not let it brown.
  3. Gradually pour in the warm whole milk, whisking constantly to prevent lumps. Continue to whisk until the sauce thickens and comes to a gentle simmer, about 5-7 minutes.
  4. Remove from heat and stir in the freshly grated nutmeg, salt, and an optional pinch of white pepper. Taste and adjust seasoning as needed.
  5. Serve immediately or cover the surface with plastic wrap to prevent a skin from forming if not using right away.
