Ingredients

  • 2 cup greek yogurt(full-fat recommended)
  • 1 pc cucumber(large, peeled, seeded, and grated)
  • 2 tbsp garlic(minced)
  • 3 tbsp fresh dill(chopped)
  • 2 tbsp olive oil(extra virgin)
  • 1 tsp salt(or to taste)
  • 1/2 tsp black pepper(freshly ground, or to taste)
  • 1 tbsp lemon juice(optional, for brightness)

Instructions

Tzatziki

  1. Grate the cucumber using the large holes of a box grater.
  2. Transfer the grated cucumber to a fine-mesh sieve set over a bowl. Let it drain for at least 10 minutes to remove excess moisture. Gently press with a spoon or your hands to squeeze out as much liquid as possible.
  3. In a medium bowl, combine the drained grated cucumber with the Greek yogurt, minced garlic, chopped fresh dill, and olive oil.
  4. Stir in the salt, freshly ground black pepper, and optional lemon juice. Mix well until all ingredients are thoroughly combined.
  5. Taste and adjust seasonings as needed. For best results, cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
