Instructions

Preperation

  1. 1Place the finely ground brown mustard seeds in a small bowl. If using whole seeds, grind them to a fine powder in a spice grinder first.
  2. 2In a separate bowl, whisk together the dry white wine and white wine vinegar.

Making the Mustard

  1. 1Pour the liquid mixture over the ground mustard seeds. Add the salt and turmeric powder (if using).
  2. 2Stir well to combine all ingredients, ensuring there are no dry pockets of mustard seed powder.
  3. 3Transfer the mixture to a blender or food processor. Add the water.
  4. 4Blend on high speed until the mustard reaches a smooth, creamy consistency. If it's too thick, add a little more water, 1 teaspoon at a time, until desired consistency is achieved.
  5. 5Taste and adjust seasoning if necessary. You might want a pinch more salt or a tad more vinegar for tang.

Storage

  1. 1Transfer the freshly made Dijon mustard to an airtight jar or container.
  2. 2Refrigerate for at least 24 hours before serving to allow the flavors to meld and develop fully. The mustard will thicken slightly as it chills.
