Ingredients

  • 1/2 cup brown mustard seeds(finely ground)
  • 1/2 cup dry white wine(such as Chardonnay or Sauvignon Blanc)
  • 2 tbsp white wine vinegar
  • 1/2 tsp salt
  • 2 tbsp water
  • 1/4 tsp turmeric powder(for color, optional)

Preperation

  1. Place the finely ground brown mustard seeds in a small bowl. If using whole seeds, grind them to a fine powder in a spice grinder first.
  2. In a separate bowl, whisk together the dry white wine and white wine vinegar.

Making the Mustard

  1. Pour the liquid mixture over the ground mustard seeds. Add the salt and turmeric powder (if using).
  2. Stir well to combine all ingredients, ensuring there are no dry pockets of mustard seed powder.
  3. Transfer the mixture to a blender or food processor. Add the water.
  4. Blend on high speed until the mustard reaches a smooth, creamy consistency. If it's too thick, add a little more water, 1 teaspoon at a time, until desired consistency is achieved.
  5. Taste and adjust seasoning if necessary. You might want a pinch more salt or a tad more vinegar for tang.

Storage

  1. Transfer the freshly made Dijon mustard to an airtight jar or container.
  2. Refrigerate for at least 24 hours before serving to allow the flavors to meld and develop fully. The mustard will thicken slightly as it chills.
