Mousse Preparation

  1. 1Melt the dark chocolate and butter together in a heatproof bowl set over a saucepan of simmering water (bain-marie), ensuring the water does not touch the bottom of the bowl. Stir until smooth and fully melted.
  2. 2Remove the bowl from the heat and allow the chocolate mixture to cool slightly. Stir in the orange zest.
  3. 3While the chocolate cools, in a separate bowl, whisk the egg yolks with half of the sugar (1oz) until pale and creamy.
  4. 4Gently fold the egg yolk mixture into the cooled chocolate mixture until well combined.
  5. 5In a clean, dry bowl, whisk the egg whites until soft peaks form. Gradually add the remaining sugar (1oz) and continue whisking until stiff, glossy peaks form.
  6. 6Add one-third of the whisked egg whites to the chocolate mixture and fold in gently to lighten it.
  7. 7Carefully fold in the remaining egg whites in two additions, taking care not to deflate the mixture. Mix until just combined, leaving some streaks if necessary.
  8. 8Divide the mousse among serving glasses or ramekins. Chill in the refrigerator for at least 2 hours, or preferably overnight, until set.
