Mousse Preparation
- 1Melt the dark chocolate and butter together in a heatproof bowl set over a saucepan of simmering water (bain-marie), ensuring the water does not touch the bottom of the bowl. Stir until smooth and fully melted.
- 2Remove the bowl from the heat and allow the chocolate mixture to cool slightly. Stir in the orange zest.
- 3While the chocolate cools, in a separate bowl, whisk the egg yolks with half of the sugar (1oz) until pale and creamy.
- 4Gently fold the egg yolk mixture into the cooled chocolate mixture until well combined.
- 5In a clean, dry bowl, whisk the egg whites until soft peaks form. Gradually add the remaining sugar (1oz) and continue whisking until stiff, glossy peaks form.
- 6Add one-third of the whisked egg whites to the chocolate mixture and fold in gently to lighten it.
- 7Carefully fold in the remaining egg whites in two additions, taking care not to deflate the mixture. Mix until just combined, leaving some streaks if necessary.
- 8Divide the mousse among serving glasses or ramekins. Chill in the refrigerator for at least 2 hours, or preferably overnight, until set.
