- 7oz dark chocolate(good quality, 70% cocoa solids)
- 2oz butter(unsalted)
- 4 pcs eggs(large, separated)
- 3oz granulated sugar
- 1 tsp orange zest(from about 1/2 an orange)
Instructions
Mousse Preparation
- Melt the dark chocolate and butter together in a heatproof bowl set over a saucepan of simmering water (bain-marie), ensuring the water does not touch the bottom of the bowl. Stir until smooth and fully melted.
- Remove the bowl from the heat and allow the chocolate mixture to cool slightly. Stir in the orange zest.
- While the chocolate cools, in a separate bowl, whisk the egg yolks with half of the sugar (1oz) until pale and creamy.
- Gently fold the egg yolk mixture into the cooled chocolate mixture until well combined.
- In a clean, dry bowl, whisk the egg whites until soft peaks form. Gradually add the remaining sugar (1oz) and continue whisking until stiff, glossy peaks form.
- Add one-third of the whisked egg whites to the chocolate mixture and fold in gently to lighten it.
- Carefully fold in the remaining egg whites in two additions, taking care not to deflate the mixture. Mix until just combined, leaving some streaks if necessary.
- Divide the mousse among serving glasses or ramekins. Chill in the refrigerator for at least 2 hours, or preferably overnight, until set.
