Instructions

Prepare Chicken

  1. 1In a bowl, toss the sliced chicken breast with 1 tbsp soy sauce and 1 tsp cornstarch. Let marinate for 10 minutes.

Make Sauce

  1. 1In a small bowl, whisk together 3 tbsp soy sauce, 2 tbsp oyster sauce, 1 tsp sesame oil, 1 tsp sugar, and 2 tbsp water. Set aside.

Stir-fry

  1. 1Heat 1 tbsp of vegetable oil in a wok or large skillet over high heat. Add the marinated chicken and stir-fry until cooked through and lightly browned. Remove chicken from wok and set aside.
  2. 2Add the remaining 2 tbsp of vegetable oil to the wok. Add minced garlic, ginger, and the white parts of the scallions. Stir-fry for about 30 seconds until fragrant.
  3. 3Add the bean sprouts and stir-fry for 1-2 minutes until slightly tender-crisp.
  4. 4Return the cooked chicken to the wok. Add the cooked egg noodles and the prepared sauce. Toss everything together to combine and coat the noodles and chicken evenly.
  5. 5Stir-fry for another 1-2 minutes, until the noodles are heated through and the sauce has thickened slightly.
  6. 6Stir in the green parts of the scallions just before serving.
