- 3 pcs eggs(large)
- 5oz forest mushrooms(cleaned and sliced (e.g., shiitake, cremini, oyster))
- 2 tbsp butter(unsalted)
- 1 tsp fresh thyme(leaves removed from stem)
- 1/2 tsp salt(or to taste)
- 1/4 tsp black pepper(freshly ground, or to taste)
- 1 tbsp chives(freshly chopped, for garnish)
Instructions
Prepare the Mushrooms
- Melt 1 tablespoon of butter in a small skillet over medium heat.
- Add the sliced forest mushrooms and fresh thyme. Sauté for 5-7 minutes until tender and lightly browned.
- Season the mushrooms with salt and pepper. Remove from heat and set aside.
Make the Omelet
- In a bowl, whisk the eggs with the remaining 1 tablespoon of butter, a pinch of salt, and pepper until well combined and slightly frothy.
- Heat a non-stick omelet pan over medium-low heat.
- Pour the egg mixture into the hot pan. Let it cook undisturbed for about 1-2 minutes until the edges begin to set.
- Gently push the cooked edges towards the center with a spatula, tilting the pan to allow the uncooked egg to flow underneath.
- Continue this process until the omelet is mostly set but still slightly moist on top.
- Spoon the sautéed mushrooms onto one half of the omelet.
- Carefully fold the other half of the omelet over the mushrooms.
- Slide the omelet onto a serving plate. Garnish with fresh chopped chives.
