Ingredients

  • 3 pcs eggs(large)
  • 5oz forest mushrooms(cleaned and sliced (e.g., shiitake, cremini, oyster))
  • 2 tbsp butter(unsalted)
  • 1 tsp fresh thyme(leaves removed from stem)
  • 1/2 tsp salt(or to taste)
  • 1/4 tsp black pepper(freshly ground, or to taste)
  • 1 tbsp chives(freshly chopped, for garnish)

Instructions

Prepare the Mushrooms

  1. Melt 1 tablespoon of butter in a small skillet over medium heat.
  2. Add the sliced forest mushrooms and fresh thyme. Sauté for 5-7 minutes until tender and lightly browned.
  3. Season the mushrooms with salt and pepper. Remove from heat and set aside.

Make the Omelet

  1. In a bowl, whisk the eggs with the remaining 1 tablespoon of butter, a pinch of salt, and pepper until well combined and slightly frothy.
  2. Heat a non-stick omelet pan over medium-low heat.
  3. Pour the egg mixture into the hot pan. Let it cook undisturbed for about 1-2 minutes until the edges begin to set.
  4. Gently push the cooked edges towards the center with a spatula, tilting the pan to allow the uncooked egg to flow underneath.
  5. Continue this process until the omelet is mostly set but still slightly moist on top.
  6. Spoon the sautéed mushrooms onto one half of the omelet.
  7. Carefully fold the other half of the omelet over the mushrooms.
  8. Slide the omelet onto a serving plate. Garnish with fresh chopped chives.
