Croissants
- 4 pcs croissant dough(store-bought or homemade, day-old is best)
Almond Frangipane Filling
- 1 cup almond flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter(softened)
- 1 pc egg
- 1/2 tsp almond extract(optional)
Toppings
- 1/2 cup slivered almonds(toasted)
- powdered sugar(for dusting)
- 2 tbsp apricot glaze(warmed, optional)
Instructions
Prepare the Frangipane
- In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg until well combined.
- Stir in the almond flour and almond extract (if using) until just combined. Do not overmix.
Assemble the Croissants
- Preheat your oven to 375°F (190°C).
- Slice each croissant lengthwise, being careful not to cut all the way through. You want to create a pocket.
- Spread a generous amount of the frangipane filling inside each croissant.
- Close the croissants and place them on a baking sheet lined with parchment paper.
- Brush the tops of the croissants with the warmed apricot glaze, if using.
- Sprinkle the tops generously with toasted slivered almonds.
Bake and Serve
- Bake for 10-12 minutes, or until the croissants are golden brown and the frangipane is set.
- Remove from oven and let cool slightly on a wire rack.
- Dust with powdered sugar just before serving.
