Ingredients

Croissants

  • 4 pcs croissant dough(store-bought or homemade, day-old is best)

Almond Frangipane Filling

  • 1 cup almond flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter(softened)
  • 1 pc egg
  • 1/2 tsp almond extract(optional)

Toppings

  • 1/2 cup slivered almonds(toasted)
  • powdered sugar(for dusting)
  • 2 tbsp apricot glaze(warmed, optional)

Instructions

Prepare the Frangipane

  1. In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg until well combined.
  3. Stir in the almond flour and almond extract (if using) until just combined. Do not overmix.

Assemble the Croissants

  1. Preheat your oven to 375°F (190°C).
  2. Slice each croissant lengthwise, being careful not to cut all the way through. You want to create a pocket.
  3. Spread a generous amount of the frangipane filling inside each croissant.
  4. Close the croissants and place them on a baking sheet lined with parchment paper.
  5. Brush the tops of the croissants with the warmed apricot glaze, if using.
  6. Sprinkle the tops generously with toasted slivered almonds.

Bake and Serve

  1. Bake for 10-12 minutes, or until the croissants are golden brown and the frangipane is set.
  2. Remove from oven and let cool slightly on a wire rack.
  3. Dust with powdered sugar just before serving.
