Instructions
Prepare the Frangipane
- 1In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy.
- 2Beat in the egg until well combined.
- 3Stir in the almond flour and almond extract (if using) until just combined. Do not overmix.
Assemble the Croissants
- 1Preheat your oven to 375°F (190°C).
- 2Slice each croissant lengthwise, being careful not to cut all the way through. You want to create a pocket.

- 4Close the croissants and place them on a baking sheet lined with parchment paper.
