Instructions

Prepare the Frangipane

  1. 1In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. 2Beat in the egg until well combined.
  3. 3Stir in the almond flour and almond extract (if using) until just combined. Do not overmix.

Assemble the Croissants

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Slice each croissant lengthwise, being careful not to cut all the way through. You want to create a pocket.
  3. 3Spread a generous amount of the frangipane filling inside each croissant.
  4. 4Close the croissants and place them on a baking sheet lined with parchment paper.
  5. 5Brush the tops of the croissants with the warmed apricot glaze, if using.
  6. 6Sprinkle the tops generously with toasted slivered almonds.

Bake and Serve

  1. 1Bake for 10-12 minutes, or until the croissants are golden brown and the frangipane is set.
  2. 2Remove from oven and let cool slightly on a wire rack.
  3. 3Dust with powdered sugar just before serving.
