For the Chicken Marinade
- 26oz chicken thighs(boneless, skinless, cut into bite-sized pieces)
- 1/2 cup yogurt(plain, full-fat recommended)
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 3 pcs garlic(minced)
- 2 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp paprika
- 1/2 tsp turmeric powder
- 1/4 tsp cinnamon powder
- 1 tsp salt
- 1/2 tsp black pepper
For Serving
- 4 pcs pita bread or flatbread(warmed)
- lettuce(shredded)
- 1 pc tomato(sliced or diced)
- 1/2 pcs cucumber(sliced or diced)
- 1/4 pcs red onion(thinly sliced)
- tahini sauce or garlic yogurt sauce(to taste)
Instructions
Marinate the Chicken
- In a large bowl, combine all the marinade ingredients: yogurt, lemon juice, olive oil, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, and pepper.
- Add the chicken pieces to the bowl and toss to ensure each piece is well coated with the marinade.
- Cover the bowl and refrigerate for at least 30 minutes, or preferably 2-4 hours (or overnight) for best flavor.
Cook the Chicken
- Heat a grill pan or outdoor grill to medium-high heat. Lightly oil the grates.
- Thread the marinated chicken pieces onto skewers, if using, or place them directly onto the grill or grill pan.
- Grill the chicken for 5-7 minutes per side, or until cooked through and slightly charred. If using skewers, rotate them to ensure even cooking.
- Once cooked, remove the chicken from the heat and let it rest for a few minutes.
Assemble the Kebabs
- Warm the pita or flatbreads.
- Slice the cooked chicken thinly, mimicking a traditional doner style, or serve chunks.
- Fill the warm pitas with shredded lettuce, sliced tomatoes, cucumber, red onion, and the cooked chicken.
- Drizzle generously with tahini sauce or garlic yogurt sauce.
- Fold or roll the pitas and serve immediately.
