Ingredients

  • 4 pcs boneless chicken thighs(skinless, boneless)
  • 3 tbsp dijon mustard
  • 2 tbsp belgian beer(such as a blonde ale or lager)
  • 2 tbsp honey
  • 2 tsp garlic(minced)
  • 1 tsp paprika(sweet paprika)
  • 1 tbsp olive oil
  • salt(to taste)
  • black pepper(freshly ground, to taste)

Instructions

Glaze Preparation

  1. In a small bowl, whisk together Dijon mustard, Belgian beer, honey, minced garlic, and paprika until well combined.

Chicken Preparation

  1. Pat the chicken thighs dry with paper towels. Season generously with salt and freshly ground black pepper.
  2. Brush the chicken thighs with olive oil.

Cooking

  1. Preheat your grill (or grill pan) to medium-high heat.
  2. Place the chicken thighs on the hot grill. Grill for about 4-5 minutes per side, until they begin to brown.
  3. Brush the chicken thighs generously with the prepared charbonnade glaze. Continue grilling for another 4-5 minutes, flipping and brushing with glaze occasionally, until the chicken is cooked through and the glaze is caramelized and slightly sticky.
  4. Ensure the internal temperature of the chicken reaches 165°F (74°C).

Serving

  1. Remove chicken from the grill and let it rest for a few minutes before serving.
