Preparation

  1. 1In a medium bowl, combine the heavy cream, sweetened condensed milk, and granulated sugar. Whisk until the sugar is fully dissolved and the mixture is well combined. Do not whip until stiff peaks form; merely incorporate the ingredients smoothly.
  2. 2Stir in the cardamom powder and rose water. Mix gently to ensure the flavors are evenly distributed throughout the kulfi base.
  3. 3Carefully fold in half of the chopped pistachios and the saffron strands into the mixture. Reserve the remaining pistachios for garnish.

Freezing

  1. 1Pour the kulfi mixture into kulfi molds or small individual serving cups. If using cups, cover each tightly with aluminum foil.
  2. 2Place the molds or cups in the freezer for a minimum of 4 hours, or preferably overnight, until the kulfi is firm and completely set. Kulfi typically takes longer to freeze than ice cream due to its denser consistency.

Serving

  1. 1To unmold the kulfi, briefly dip the bottom of the mold in warm water for a few seconds. This will slightly loosen the kulfi from the sides.
  2. 2Carefully slide the kulfi out onto a serving plate. Garnish with the remaining chopped pistachios and an extra pinch of saffron strands for a vibrant presentation.
