- 18oz all-purpose flour(plus extra for dusting)
- 3oz granulated sugar
- 0oz active dry yeast(1 packet)
- 2 tsp cardamom(ground)
- 1 tsp salt
- 8 3/7 fl oz milk(lukewarm)
- 3oz unsalted butter(melted and slightly cooled)
- 1 pc egg(large, lightly beaten)
Filling
- 3oz unsalted butter(softened)
- 4oz brown sugar(packed)
- 2 tbsp cinnamon(ground)
- 1 tsp cardamom(ground)
- 4oz pecans(toasted and chopped)
Glaze
- 5oz powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
Dough
- In a large bowl, whisk together flour, granulated sugar, yeast, ground cardamom, and salt.
- In a separate bowl, combine lukewarm milk, melted butter, and beaten egg. Pour the wet ingredients into the dry ingredients.
- Mix until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Assembly and Baking
- Punch down the risen dough and turn it out onto a lightly floured surface. Roll into a large rectangle, approximately 12x18 inches.
- In a small bowl, mix softened butter, brown sugar, cinnamon, and ground cardamom for the filling. Spread this mixture evenly over the dough, leaving a small border on one long edge.
- Sprinkle the chopped toasted pecans over the filling.
- Tightly roll up the dough starting from the long edge *opposite* the border. Pinch the seam to seal.
- Cut the log into 12 equal slices. Place the slices cut-side up in a greased 9x13 inch baking pan.
- Cover the pan and let the buns rise for another 30-45 minutes while the oven preheats to 375°F (190°C).
- Bake for 18-20 minutes, or until golden brown.
Glazing and Serving
- While the buns are baking, whisk together powdered sugar, milk, and vanilla extract to make the glaze. Adjust consistency with more milk or sugar if needed.
- Remove buns from the oven and immediately drizzle the glaze over the warm buns.
- Let cool slightly before serving.

Tips
- Ensure your milk is lukewarm, not hot, to activate the yeast properly for a good rise.
- To prevent the bottoms from burning, you can place a baking sheet on the rack below the buns.
- Serve warm with a glass of milk or a cup of coffee for the ultimate Swedish treat.
