Preparation

  1. 1Preheat oven to 200°C (400°F). Lightly grease a baking dish.
  2. 2Place each chicken breast between two pieces of plastic wrap and pound with a meat mallet until about 1/2 inch thick.
  3. 3Season both sides of the pounded chicken breasts with salt, pepper, and garlic powder.

Assembly and Baking

  1. 1Arrange slices of mozzarella, tomato, and fresh basil over one half of each chicken breast.
  2. 2Fold the other half of the chicken breast over the filling to create a pocket. Secure with toothpicks if needed.
  3. 3Brush the tops of the chicken breasts with olive oil.
  4. 4Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. The internal temperature should reach 74°C (165°F).

Serving
