Ingredients

  • 4 pcs chicken breast(boneless, skinless, about 6 oz each)
  • 8oz fresh mozzarella(sliced)
  • 1 cup fresh basil leaves(packed)
  • 1/2 cup sun-dried tomatoes(oil-packed, drained and chopped)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

Chicken Preparation

  1. Preheat oven to 400°F (200°C).
  2. Place chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound them to an even 1/4-inch thickness.
  3. Season both sides of the pounded chicken breasts with salt and pepper.

Stuffing and Assembly

  1. On one half of each chicken breast, layer 2 slices of fresh mozzarella, a generous sprinkle of fresh basil leaves, and some chopped sun-dried tomatoes.
  2. Fold the other half of the chicken breast over the filling, pressing the edges gently to seal. If needed, use toothpicks to secure the edges.

Cooking

  1. Heat olive oil in an oven-safe skillet over medium-high heat.
  2. Carefully place the stuffed chicken breasts in the hot skillet and sear for 2-3 minutes per side until lightly golden.
  3. Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and the mozzarella is melted and bubbly.
