Instructions

Chicken Preparation

  1. 1Preheat oven to 400°F (200°C).
  2. 2Place chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound them to an even 1/4-inch thickness.
  3. 3Season both sides of the pounded chicken breasts with salt and pepper.

Stuffing and Assembly

  1. 1On one half of each chicken breast, layer 2 slices of fresh mozzarella, a generous sprinkle of fresh basil leaves, and some chopped sun-dried tomatoes.
  2. 2Fold the other half of the chicken breast over the filling, pressing the edges gently to seal. If needed, use toothpicks to secure the edges.

Cooking

  1. 1Heat olive oil in an oven-safe skillet over medium-high heat.
  2. 2Carefully place the stuffed chicken breasts in the hot skillet and sear for 2-3 minutes per side until lightly golden.
  3. 3Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and the mozzarella is melted and bubbly.

Tips

  • For easier pounding, freeze chicken breasts slightly until firm but not solid.
  • Ensure the skillet is oven-safe before searing the chicken to transfer it directly to the oven.
  • Serve immediately with a side of pasta or a fresh salad for a complete Italian meal.
