Ingredients
- 4 pcs chicken breast(boneless, skinless, about 6 oz each)
- 8oz fresh mozzarella(sliced)
- 1 cup fresh basil leaves(packed)
- 1/2 cup sun-dried tomatoes(oil-packed, drained and chopped)
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
Chicken Preparation
- Preheat oven to 400°F (200°C).
- Place chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound them to an even 1/4-inch thickness.
- Season both sides of the pounded chicken breasts with salt and pepper.
Stuffing and Assembly
- On one half of each chicken breast, layer 2 slices of fresh mozzarella, a generous sprinkle of fresh basil leaves, and some chopped sun-dried tomatoes.
- Fold the other half of the chicken breast over the filling, pressing the edges gently to seal. If needed, use toothpicks to secure the edges.
Cooking
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Carefully place the stuffed chicken breasts in the hot skillet and sear for 2-3 minutes per side until lightly golden.
- Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and the mozzarella is melted and bubbly.
