Ingredients

  • 2 pcs chicken breast(boneless, skinless)
  • 1 pc ripe tomatoes(medium, sliced)
  • 4oz fresh mozzarella(ball, sliced)
  • 1/4 cup fresh basil(chopped)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper(freshly ground)
  • 1 tbsp balsamic glaze(optional, for drizzle)

Instructions

Preparation

  1. Preheat oven to 200°C (400°F). Lightly grease a baking dish.
  2. Place each chicken breast between two pieces of plastic wrap and pound with a meat mallet until about 1/2 inch thick.
  3. Season both sides of the pounded chicken breasts with salt, pepper, and garlic powder.

Assembly and Baking

  1. Arrange slices of mozzarella, tomato, and fresh basil over one half of each chicken breast.
  2. Fold the other half of the chicken breast over the filling to create a pocket. Secure with toothpicks if needed.
  3. Brush the tops of the chicken breasts with olive oil.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. The internal temperature should reach 74°C (165°F).

Serving

  1. Remove from oven, let rest for a few minutes, then remove toothpicks.
  2. Drizzle with balsamic glaze, if desired, before serving.
