- 1 pc ripe tomatoes(medium, sliced)
- 4oz fresh mozzarella(ball, sliced)
- 1/4 cup fresh basil(chopped)
- 1 tbsp olive oil

- 1/4 tsp salt
- 1/8 tsp black pepper(freshly ground)
- 1 tbsp balsamic glaze(optional, for drizzle)

Preparation
- Preheat oven to 200°C (400°F). Lightly grease a baking dish.
- Place each chicken breast between two pieces of plastic wrap and pound with a meat mallet until about 1/2 inch thick.
- Season both sides of the pounded chicken breasts with salt, pepper, and garlic powder.
Assembly and Baking
- Arrange slices of mozzarella, tomato, and fresh basil over one half of each chicken breast.
- Fold the other half of the chicken breast over the filling to create a pocket. Secure with toothpicks if needed.
- Brush the tops of the chicken breasts with olive oil.
- Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. The internal temperature should reach 74°C (165°F).
Serving
