Ingredients

Fritters

  • 2 cup mashed potatoes(cooled)
  • 1 cup cabbage(finely shredded)
  • 1/2 cup onion(finely chopped)
  • 1/2 cup flour(plus more for dusting)
  • 1 pc egg(beaten)
  • tsp salt(taste; to)
  • tsp black pepper(taste; to)
  • cup vegetable oil(frying; for)

Bacon Jam

  • 8oz bacon(chopped)
  • 1 cup onion(thinly sliced)
  • 1/2 cup brown sugar
  • 1/4 cup cider vinegar
  • 2 tbsp maple syrup
  • 1/4 cup water

Instructions

Make the Bacon Jam

  1. In a skillet, cook bacon until crisp. Remove bacon and set aside, leaving drippings in the pan.
  2. Add sliced onion to the bacon drippings and cook until softened, about 5-7 minutes.
  3. Crumble the cooked bacon and add it back to the skillet with the onions. Stir in brown sugar, cider vinegar, maple syrup, and water.
  4. Simmer over low heat for 15-20 minutes, stirring occasionally, until the mixture has thickened into a jam-like consistency.
  5. Remove from heat and let cool.

Prepare the Fritter Mixture

  1. In a large bowl, combine the mashed potatoes, shredded cabbage, chopped onion, flour, beaten egg, salt, and pepper.
  2. Mix well until all ingredients are evenly incorporated. The mixture should be thick enough to form patties.

Fry the Fritters

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Shape the potato mixture into small patties or fritters.
  3. Carefully place the fritters into the hot oil and fry for 3-5 minutes per side, until golden brown and heated through.
  4. Remove fritters from the skillet and drain on paper towels.
