- 1 cup cabbage(finely shredded)
- 1/2 cup onion(finely chopped)

Bacon Jam
- 8oz bacon(chopped)
- 1 cup onion(thinly sliced)

Instructions
Make the Bacon Jam
- In a skillet, cook bacon until crisp. Remove bacon and set aside, leaving drippings in the pan.
- Add sliced onion to the bacon drippings and cook until softened, about 5-7 minutes.
- Crumble the cooked bacon and add it back to the skillet with the onions. Stir in brown sugar, cider vinegar, maple syrup, and water.
- Simmer over low heat for 15-20 minutes, stirring occasionally, until the mixture has thickened into a jam-like consistency.
- Remove from heat and let cool.
Prepare the Fritter Mixture
- In a large bowl, combine the mashed potatoes, shredded cabbage, chopped onion, flour, beaten egg, salt, and pepper.
- Mix well until all ingredients are evenly incorporated. The mixture should be thick enough to form patties.
Fry the Fritters
- Heat vegetable oil in a large skillet over medium heat.
- Shape the potato mixture into small patties or fritters.
- Carefully place the fritters into the hot oil and fry for 3-5 minutes per side, until golden brown and heated through.
- Remove fritters from the skillet and drain on paper towels.
