Ingredients

  • 4 pcs bratwurst(high-quality pork or mixed meat)
  • 2 pcs yellow onions(large, thinly sliced)
  • 12 fl oz dark beer(such as a Dunkel or Bock)
  • 2 tbsp butter
  • 1 tbsp vegetable oil
  • 1 tsp caraway seeds
  • 2 tbsp dijon mustard(for serving)
  • 1 tsp salt(or to taste)
  • 1/2 tsp black pepper(freshly ground, or to taste)
  • 1 pc bay leaf

  1. In a large skillet or Dutch oven, heat the vegetable oil and butter over medium-high heat. Add the sliced onions and cook, stirring occasionally, until deeply caramelized, about 15-20 minutes. Add the caraway seeds and cook for 1 minute more until fragrant.
  2. While the onions are caramelizing, pierce the bratwurst several times with a fork. Add the bratwurst to the skillet with the onions. Brown bratwurst on all sides, about 2-3 minutes per side.
  3. Pour the dark beer into the skillet, scraping up any browned bits from the bottom. Add the bay leaf, salt, and pepper. Bring the liquid to a simmer.
  4. Reduce the heat to low, cover the skillet, and simmer for 20-25 minutes, or until the bratwurst are cooked through and the liquid has slightly reduced into a sauce.
  5. Remove the bay leaf before serving.
