- 2 pcs yellow onions(large, thinly sliced)
- 12 fl oz dark beer(such as a Dunkel or Bock)
- 2 tbsp butter
- 1 tbsp vegetable oil

- 2 tbsp dijon mustard(for serving)

- 1 pc bay leaf

- In a large skillet or Dutch oven, heat the vegetable oil and butter over medium-high heat. Add the sliced onions and cook, stirring occasionally, until deeply caramelized, about 15-20 minutes. Add the caraway seeds and cook for 1 minute more until fragrant.
- While the onions are caramelizing, pierce the bratwurst several times with a fork. Add the bratwurst to the skillet with the onions. Brown bratwurst on all sides, about 2-3 minutes per side.
- Pour the dark beer into the skillet, scraping up any browned bits from the bottom. Add the bay leaf, salt, and pepper. Bring the liquid to a simmer.
- Reduce the heat to low, cover the skillet, and simmer for 20-25 minutes, or until the bratwurst are cooked through and the liquid has slightly reduced into a sauce.
- Remove the bay leaf before serving.
