Ingredients

Grechanyky

  • 2 cup buckwheat flour
  • 18oz minced pork(can substitute with chicken or beef)
  • 1 pc onion(finely grated or minced)
  • 1 pc egg(lightly beaten)
  • 2 tbsp garlic(minced)
  • 1 tsp salt(or to taste)
  • 1/2 tsp black pepper(freshly ground, or to taste)
  • 2 tbsp vegetable oil(for greasing)

Creamy Dill Dip

  • 1 cup sour cream(full fat recommended)
  • 1/4 cup fresh dill(finely chopped)
  • 1 tbsp lemon juice(freshly squeezed)
  • 1/2 tsp garlic powder(or to taste)
  • 1/4 tsp salt(or to taste)

Instructions

Make the Grechanyky

  1. Preheat your oven to 200°C (400°F). Lightly grease a baking sheet with vegetable oil.
  2. In a large bowl, combine the buckwheat flour, minced pork, grated onion, beaten egg, minced garlic, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  3. With damp hands, shape the mixture into small, flattened patties (about 2-3 inches in diameter and 0.5 inch thick).
  4. Place the shaped grechanyky onto the prepared baking sheet.
  5. Bake for 20-25 minutes, flipping halfway through, until the grechanyky are cooked through and lightly golden brown.

Prepare the Creamy Dill Dip

  1. While the grechanyky are baking, prepare the dip. In a medium bowl, combine the sour cream, chopped fresh dill, lemon juice, garlic powder, and salt.
  2. Stir well until everything is evenly incorporated. Taste and adjust seasoning if needed.

Serve

  1. Serve the baked grechanyky warm with the creamy dill dip on the side.
