Instructions
Prepare Herb Butter
- 1In a small bowl, combine softened butter, minced garlic, chopped fresh parsley, salt, and black pepper. Mix thoroughly until well combined.
- 2Spoon the herb butter onto a piece of plastic wrap or parchment paper. Roll it into a log shape, approximately 1 inch in diameter. Twist the ends to seal and freeze for at least 30 minutes, or until firm.
Prepare Chicken
- 1Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
- 2Place each chicken breast between two sheets of plastic wrap. Using a meat mallet or a heavy pan, pound the chicken breasts until they are about 1/4 inch thick. Season both sides with salt and pepper.
- 3Cut the chilled herb butter log into 4 equal pieces. Place one piece of butter in the center of each pounded chicken breast.
- 4Fold the sides of the chicken over the butter, then roll tightly to completely enclose the butter, ensuring no gaps. Pinch the ends together to seal.
Breading and Baking
- 1Set up a breading station: one shallow dish with flour, one with beaten eggs, and one with breadcrumbs.
- 2Dredge each chicken roll in flour, shaking off excess. Then dip it into the beaten egg, allowing any extra to drip off. Finally, thoroughly coat it in breadcrumbs, pressing gently to adhere.
- 3Place the breaded chicken rolls on the prepared baking sheet. Drizzle with olive oil.
- 4Bake for 25-30 minutes, or until the internal temperature reaches 74°C (165°F) and the breading is golden brown and crispy.
- 5Let the Chicken Kyiv rest for a few minutes before serving to allow the juices to redistribute and prevent the butter from gushing out too quickly.
