Ingredients

  • 7oz flour(all-purpose flour)
  • 5oz butter(unsalted, softened)
  • 4oz sugar(granulated sugar)
  • 2oz almonds(finely ground)
  • 1 tsp orange zest(from 1 medium orange)
  • 1 pc egg yolk
  • 1 tsp salt

Instructions

Ghent Moppen

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg yolk and orange zest until well combined.
  3. In a separate bowl, whisk together the flour, ground almonds, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a dough forms.
  5. Shape the dough into a log, approximately 5 cm (2 inches) in diameter. Wrap in parchment paper and chill in the refrigerator for at least 30 minutes, or until firm.
  6. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  7. Once chilled, unwrap the dough log and slice it into rounds about 5 mm (1/4 inch) thick.
  8. Place the sliced moppen onto the prepared baking sheet, leaving a little space between each.
  9. Bake for 12-15 minutes, or until the edges are lightly golden brown. They will crisp up as they cool.
  10. Let the moppen cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Tips

  • For a finer texture, sift the flour and ground almonds together before adding to the wet ingredients.
  • Keep an eye on the moppen during baking; they can brown quickly due to the sugar and almonds.
  • Serve these crispy biscuits with coffee or tea for an authentic Belgian treat.
