Ghent Moppen

  1. 1In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. 2Beat in the egg yolk and orange zest until well combined.
  3. 3In a separate bowl, whisk together the flour, ground almonds, and salt.
  4. 4Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a dough forms.
  5. 5Shape the dough into a log, approximately 5 cm (2 inches) in diameter. Wrap in parchment paper and chill in the refrigerator for at least 30 minutes, or until firm.
  6. 6Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  7. 7Once chilled, unwrap the dough log and slice it into rounds about 5 mm (1/4 inch) thick.
  8. 8Place the sliced moppen onto the prepared baking sheet, leaving a little space between each.
  9. 9Bake for 12-15 minutes, or until the edges are lightly golden brown. They will crisp up as they cool.
  10. 10Let the moppen cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
