Instructions
Ghent Moppen
- 1In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- 2Beat in the egg yolk and orange zest until well combined.
- 3In a separate bowl, whisk together the flour, ground almonds, and salt.
- 4Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a dough forms.
- 5Shape the dough into a log, approximately 5 cm (2 inches) in diameter. Wrap in parchment paper and chill in the refrigerator for at least 30 minutes, or until firm.
- 6Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- 7Once chilled, unwrap the dough log and slice it into rounds about 5 mm (1/4 inch) thick.
- 8Place the sliced moppen onto the prepared baking sheet, leaving a little space between each.
- 9Bake for 12-15 minutes, or until the edges are lightly golden brown. They will crisp up as they cool.
- 10Let the moppen cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Tips
- For a finer texture, sift the flour and ground almonds together before adding to the wet ingredients.
- Keep an eye on the moppen during baking; they can brown quickly due to the sugar and almonds.
- Serve these crispy biscuits with coffee or tea for an authentic Belgian treat.
