- 5oz butter(unsalted, softened)
- 4oz sugar(granulated sugar)
- 2oz almonds(finely ground)
- 1 tsp orange zest(from 1 medium orange)
- 1 pc egg yolk
- 1 tsp salt
Instructions
Ghent Moppen
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg yolk and orange zest until well combined.
- In a separate bowl, whisk together the flour, ground almonds, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a dough forms.
- Shape the dough into a log, approximately 5 cm (2 inches) in diameter. Wrap in parchment paper and chill in the refrigerator for at least 30 minutes, or until firm.
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Once chilled, unwrap the dough log and slice it into rounds about 5 mm (1/4 inch) thick.
- Place the sliced moppen onto the prepared baking sheet, leaving a little space between each.
- Bake for 12-15 minutes, or until the edges are lightly golden brown. They will crisp up as they cool.
- Let the moppen cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
