Instructions
Roast Potatoes
- 1Preheat oven to 200°C (400°F).
- 2Toss potato cubes with 2 tbsp of olive oil, salt, and pepper on a baking sheet.
- 3Roast for 20-25 minutes, or until tender and golden brown, flipping halfway through.
Prepare Alheira and Eggs
- 1While potatoes are roasting, prick the alheiras with a fork to prevent bursting.
- 2Heat 1 tbsp of olive oil in a non-stick skillet over medium heat.
- 3Add the alheiras and pan-sear for about 10-12 minutes, turning occasionally, until browned and heated through.
- 4In a separate pan, fry the eggs to your preference using the remaining 1 tbsp of olive oil.
Assemble
- 1Divide the roasted potatoes between two plates.
- 2Place one pan-seared alheira on top of the potatoes on each plate.
