Ingredients
- 14oz alheira de mirandela(approx. 2 sausages)
- 2 pcs potatoes(medium, cut into cubes)
- 2 pcs eggs
- 4 tbsp olive oil(divided)
- salt(to taste)
- black pepper(to taste)
Instructions
Roast Potatoes
- Preheat oven to 200°C (400°F).
- Toss potato cubes with 2 tbsp of olive oil, salt, and pepper on a baking sheet.
- Roast for 20-25 minutes, or until tender and golden brown, flipping halfway through.
Prepare Alheira and Eggs
- While potatoes are roasting, prick the alheiras with a fork to prevent bursting.
- Heat 1 tbsp of olive oil in a non-stick skillet over medium heat.
- Add the alheiras and pan-sear for about 10-12 minutes, turning occasionally, until browned and heated through.
- In a separate pan, fry the eggs to your preference using the remaining 1 tbsp of olive oil.
Assemble
- Divide the roasted potatoes between two plates.
- Place one pan-seared alheira on top of the potatoes on each plate.
- Top each alheira with a fried egg.
- Season with salt and pepper if desired.
