Ingredients

  • 14oz alheira de mirandela(approx. 2 sausages)
  • 2 pcs potatoes(medium, cut into cubes)
  • 2 pcs eggs
  • 4 tbsp olive oil(divided)
  • salt(to taste)
  • black pepper(to taste)

Instructions

Roast Potatoes

  1. Preheat oven to 200°C (400°F).
  2. Toss potato cubes with 2 tbsp of olive oil, salt, and pepper on a baking sheet.
  3. Roast for 20-25 minutes, or until tender and golden brown, flipping halfway through.

Prepare Alheira and Eggs

  1. While potatoes are roasting, prick the alheiras with a fork to prevent bursting.
  2. Heat 1 tbsp of olive oil in a non-stick skillet over medium heat.
  3. Add the alheiras and pan-sear for about 10-12 minutes, turning occasionally, until browned and heated through.
  4. In a separate pan, fry the eggs to your preference using the remaining 1 tbsp of olive oil.

Assemble

  1. Divide the roasted potatoes between two plates.
  2. Place one pan-seared alheira on top of the potatoes on each plate.
  3. Top each alheira with a fried egg.
  4. Season with salt and pepper if desired.
