Instructions
Braise the Pork Belly
- 1In a pot, combine pork belly, 0.5 cup soy sauce, shaoxing wine, 2oz rock sugar, scallions, garlic, and 2 cups of water.
- 2Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until the pork is tender.
- 3Remove pork pieces from the braising liquid, discarding the scallions and garlic. Reserve the braising liquid.
Air Fry the Pork Bites
- 1Preheat your air fryer to 200°C (400°F).
- 2Place the braised pork belly cubes in the air fryer basket in a single layer.
- 3Air fry for 10-15 minutes, flipping halfway through, until golden brown and crispy.
Make the Glaze
- 1While pork is air frying, pour about 1/4 cup of the reserved braising liquid into a small saucepan.
- 2Add 2 tbsp soy sauce and 1 tbsp rock sugar. Bring to a simmer over medium heat, stirring until sugar dissolves and the sauce thickens slightly.
Serve
- 1Toss the crispy pork bites with the glaze or serve the glaze on the side for dipping.
