Instructions

Braise the Pork Belly

  1. 1In a pot, combine pork belly, 0.5 cup soy sauce, shaoxing wine, 2oz rock sugar, scallions, garlic, and 2 cups of water.
  2. 2Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until the pork is tender.
  3. 3Remove pork pieces from the braising liquid, discarding the scallions and garlic. Reserve the braising liquid.

Air Fry the Pork Bites

  1. 1Preheat your air fryer to 200°C (400°F).
  2. 2Place the braised pork belly cubes in the air fryer basket in a single layer.
  3. 3Air fry for 10-15 minutes, flipping halfway through, until golden brown and crispy.

Make the Glaze

  1. 1While pork is air frying, pour about 1/4 cup of the reserved braising liquid into a small saucepan.
  2. 2Add 2 tbsp soy sauce and 1 tbsp rock sugar. Bring to a simmer over medium heat, stirring until sugar dissolves and the sauce thickens slightly.

Serve

  1. 1Toss the crispy pork bites with the glaze or serve the glaze on the side for dipping.
