Ingredients
- 2lb pork belly(cut into 2.5cm cubes)
- 1/2 cup soy sauce(for braising)
- 1/4 cup shaoxing wine(for braising)
- 2oz rock sugar(or granulated sugar)
- 4 pcs scallions(cut into 5cm lengths)
- 4 pcs garlic(cloves, smashed)
- 2 cup water(for braising)
- 2 tbsp soy sauce(for glaze)
- 1 tbsp rock sugar(for glaze)
Instructions
Braise the Pork Belly
- In a pot, combine pork belly, 0.5 cup soy sauce, shaoxing wine, 2oz rock sugar, scallions, garlic, and 2 cups of water.
- Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until the pork is tender.
- Remove pork pieces from the braising liquid, discarding the scallions and garlic. Reserve the braising liquid.
Air Fry the Pork Bites
- Preheat your air fryer to 200°C (400°F).
- Place the braised pork belly cubes in the air fryer basket in a single layer.
- Air fry for 10-15 minutes, flipping halfway through, until golden brown and crispy.
Make the Glaze
- While pork is air frying, pour about 1/4 cup of the reserved braising liquid into a small saucepan.
- Add 2 tbsp soy sauce and 1 tbsp rock sugar. Bring to a simmer over medium heat, stirring until sugar dissolves and the sauce thickens slightly.
Serve
- Toss the crispy pork bites with the glaze or serve the glaze on the side for dipping.
